A garden-style bourbon bar on Bryan Road with a twist — we don't cook a thing. Every night, 3 to 5 local restaurants and chefs bring the food. Pour your own beer at the wall, sip bourbon at the bar, or book the whole place for the wedding.
Barrel and Bites started with a stubborn idea — that a neighborhood ought to have one place where the bourbon list reads like a love letter, the garden stays open as long as the lanterns are lit, and the food comes from the best kitchens in town. Not ours. Theirs.
We don't have a kitchen. We don't have a head chef. We don't have a menu. What we have is a bar, a garden, a wall of bourbon barrels, an outdoor amphitheater, a koi pond, a self-pour beer wall, and a waterfall-anchored monument sign you can see from Bryan Road — and an open invitation to the best local restaurants and chefs in O'Fallon and St. Charles County to come cook for our guests.
Every night, 3 to 5 of them set up at Barrel and Bites and cook around a different theme. Indian street food on Mondays. Spanish tapas on Tuesdays. Dumpling houses and ramen shops on Wednesdays. Right through a Southern BBQ Friday and brunch crews on Sunday. One garden, one bourbon bar, a rotating roster of the people who already do it best.
Two-acre lot. A bourbon-barrel building. An outdoor garden with picnic seating. An amphitheater with a stage. A waterfall-anchored monument you can see from the road. A koi pond. An outdoor game lawn. A food truck lane. All of it built for long nights, big crowds, and the kind of evenings that turn into mornings.
The whole second floor — barrel-stave seating, the curved canopy strung with lights, a private bar, and a view over the garden and amphitheater. Built as one open deck and three ways to use it: book the whole thing, reserve a table, or walk up for the best seat in the house.

Members within 15 miles of Bryan Road get curb-to-curb pickup and drop-off in our company SUV — so the only thing standing between you and a pour of Stagg is the ride home. $15 flat fee each way. No surge pricing, no waiting for a rideshare. Book through the member app or call the bar two hours ahead.

We don't keep a bourbon list. We keep a bourbon wall — 80+ hand-picked single-barrel pours from Kentucky distilleries we've personally visited. When a barrel's gone, the next one comes home with us. Rotation is the whole point.

Barrel and Bites doesn't cook — not for the public, and not for your event. Every plate at every private booking comes from a local restaurant, chef, caterer, or food truck of your choosing. We help you pick from a curated list of trusted partners — or bring in your own. The bar is ours. The food is yours.
